1 hard-boiled egg, sliced (optional)
Veggies:
1/2 cucumber, sliced
1/2 c. halved cherry tomatoes
1/2 cup shredded carrots
1/4 red onion, thinly sliced
1/2 avocado, sliced
Crunch:
1/4 cup chickpeas or nuts (soaked and roasted) such as almonds, walnuts or sunflower seeds
Dressing:
2 tablespoons olive oil
1 tablespoon lemon juice
1 te Dressing:
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper to taste
Cheese: feta or goat cheese (soft and tangy)
Spices: a pinch of cumin, paprika or chili flakes would be great for a nice kick in there
Instructions:
Prepare the Base:
The first layer of the bowl would be a handful of Mixed green grain. For a more substantial and nutritious meal, add 1 serve of quinoa or brown rice to your bowl.
Add Protein:
Whether you grab grilled chicken tofu, take chickpeas (or is that sandwich for garbanzos btw? Next of course on your list is having your protein ready to be dropped in the bowl! Place it over grains and greens.
Pile on the Veggies:
