With tropical pancakes, you can whip up a yummy breakfast that is new and unique to regular boring pancakes. This cocktail of sweet, ripe fruits — pineapple and mango — coupled with the velvety texture brought on by a mix of sun-soaked coconut and perfectly ripened bananas is music to the palate. 2t butter, melted (or reduced to around 30g) including some extra for the pan.

1/2 tsp vanilla extract

1 ripe banana, mashed

1/2 cup diced fresh pineapple

1/2 cup diced fresh mango

Shredded coconut, (1/4 cup — optional add-in provides a nice crunchy texture)

Toppings, if you like: fresh tropical fruit, maple syrup, honey or Greek yogurt for a bit of savory tang

Dry Ingredients First: Mix the flour, sugar, baking powder, and salt together in a large mixing bowl. The key is you take all of these dry ingredients and mix them together–this creates the base for that wonderful, fluffy pancake batter that makes your pancakes rise so well.

Prepare the Wet Ingredients: In a separate bowl, whisk together the egg, coconut milk, melted butter, vanilla extract and mashed banana. It naturally sweetens and moistens the pancakes while the coconut milk aids in enhancing the tropical flavor.
