Crispy, salty, Roasted Vegetable Baked Falafel Wraps and full of delicious umami flavor in a healthy wrap? These Roasted Vegetable-baked Baked Falafel Wraps are filled with crispy baked falafels, roasted veg, and creamy tahini sauce. They’re filling, and healthy and come with a variety of toppings that make for an amazing lunch or dinner option — not to mention something you can prep ahead!
Ingredients:
For the Baked Falafel:
1 (15 oz) can chickpeas, rinsed and drained
1/4 cup chopped flat-leaf parsley
2 teaspoons chopped fresh cilantro
1 small onion, diced
2 cloves garlic, minced
1 tablespoon lemon juice
1 teaspoon ground cumin
1 teaspoon ground coriander
1/4 teaspoon baking powder
3 tablespoons of all-purpose or chickpea flour
Salt and pepper to taste
Olive oil spray
For the Roasted Vegetables:
1 green, yellow, or red bell pepper slice
1 zucchini, sliced
1 red onion, sliced
1 tablespoon olive oil
Salt and pepper to taste
For the Wrap Assembly:
4 large whole-wheat or gluten-free tortillas
1 cup mixed greens or spinach
1/2 C cherry tomatoes, halved
1/4 cup cucumber slices
Drizzling of tahini or hummus
Instructions:
Prepare the Baked Falafel
Bread Cheese Sticks! Preheat Oven to 400* F and Line a Baking Sheet with parchment paper.
Combine the chickpeas, parsley/cilantro mixture, onion, and garlic in a food processor with lemon juicecumin, coriander baking powder, and flour Season with salt and pepper.
Blend until smooth but still somewhat chunky; do not over-blend.
Take about 1 1/2 tbsp of the mixture and make it into small balls or patties. Put them on the prepared baking sheet and spritz with olive oil.
Spread on the baking sheet and bake for 20-25 minutes, turning halfway through until golden brown and crispy.
Roast the Vegetables
Mix the bell pepper strips with zucchini and red onion slices in 3 tbsp of olive oil together with salt (small) and black pepper on a separate baking sheet.
Put the tray into the same oven and roast at 400°F for about 15 to 20 minutes or until golden brown.
Assemble the Wraps
2 Place a little bit of the filling in each wrap.
In the middle of each wrap add a thin tabouleh, falafel, or hummus sliced spread.
A couple of big handfuls of mixed greens, some roasted vegetables, tomatoes & cucumber slices, and 3-4 baked falafel balls
Top with the tahini sauce if using.
Wrap and Serve
Bring two sides of each wrap toward the center then roll it very tightly from bottom to top making sure all ingredients are secure.
Serve now, or wrap it in foil and take it away.
