1 small, AIC Roasted Red Onion (Thinly sliced)
1 small cucumber, sliced
1 ripe tomato, sliced
2 tablespoons capers, rinsed

4 to 5 tablespoons good extra-virgin olive oil
2 tbsp red wine vinegar
1 clove garlic, minced
Salt and pepper to taste
A couple of arugula leaves or mixed greens salad
