For the Chicken Filling:
1 pound ground chicken (or finely minced raw chicken breast)
1 tablespoon olive oil
1 small onion, finely diced
2 cloves garlic, minced
Tablespoons Soy sauce or tamari (gluten-free)
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1/2 teaspoon grated ginger
Pinch of red pepper flakes (optional for heat)
1/2 cup shredded carrots
1/2 cup chopped bell peppers
1/4 cup chopped green onions
1 tablespoon rice vinegar
For the Peanut Sauce:
1/3 cup creamy or chunky peanut butter
2 Tablespoons soy sauce (Tamari for gluten-free)
1 tablespoon rice vinegar
1 tbsp honey (or maple syrup for vegan)
a pinch of sriracha (optional, for heat)
1/4 cup warm water, to be used to adjust the thickness of the sauce
For Serving:
1 individual head of butter lettuce (or iceberg or any leafy vegetable)
1/4 C Chopped peanuts, garnish
Coriander leaves/cilantro or mint — for garnish.
Mint for garnish (extra flavor)Lime wedges to serve on the side
Chicken Lettuce Wraps with Peanut Sauce Recipe
Stage 1:- Make the Chicken Filling
Heat olive oil in a large skillet or frying pan over medium. Add onions and cook for 3-4 minutes, until soft and translucent. Add garlic and cook for 1 minute, or until fragrant.
Put defrosted ground chicken in the skillet and cook completely through while breaking it up with a spoon, this will take 5-7 minutes.
Step 2: Put the Sauces And Veggies
Once the chicken is done cooking, add soy sauce, hoisin sauce, sesame oil, and ginger/red pepper flakes (if using). Stir the mix thoroughly until all chicken pieces are well covered in sauce.
Place the shredded carrots, bell peppers, and green onions in the skillet. Heat for another 2-3 minutes or until the vegetables are tender but still crisp.
Add rice vinegar and cook for 1 more minute so flavors meld. Heat half of the mixture on a stove and reserve for later.
Step 3: Make the Peanut Sauce
While the chicken filling cooks, combine all of your peanut sauce ingredients in a small bowl. In a small bowl, whisk together the peanut butter through sriracha (if using).
Gradually add very warm water to the sauce, a bit at a single time, and stir well until it reaches your desired consistency. It should be consistent with thick, pourable ranch dressing. Set the peanut sauce aside.

Gently pull leaves from the butter lettuce head and rinse with cold water. Blot dry with paper towels and place on a large platter to serve.
