1. Prepare the Pancake Batter

The key to creating a recipe that produces perfect Banana-Spice Cakes is developing a careful balance of wet and dry ingredients. Here’s how:

Add the flour, sugar, baking powder, baking soda, cinnamon, nutmeg and cloves and salt together in a large mixing bowl. The spices are what make these cakes have that yummy warm, comforting flavor and the leavening agents are what help them rise well and be fill in fluffy.

In another bowl, mash up the ripe bananas until creamy. The bananas must be well-ripened as they add sweetness and moisture to the columnascus. Whisk the buttermilk, eggs, melted butter and vanilla extract into the mashed banana until everything is thoroughly combined.

Slowly add wet ingredients to the dry, mixing until just incorporated. Do not overmix, a few lumps are okay in the batter. That means, when it is all said and done, avoid overmixing or by golly you could end up with tough pancakes instead of fluffy ones.

Let sit for 5 minutes so the ingredients get to know each other and the leavening agents activate.

2. Cook the Banana-Spice Cakes

Cooking the Banana-Spice Cakeslong enough so they brown a little and get crisp around the edges is essential to their crispy-chewiness– just note it’s true bare could lead to some very chewy parts.

Get a skillet or griddle hot over medium heat, add a little butter or cooking spray.

Pour ¼ cup of batter onto skillet for each pancake. Batter should be thick but will spread slightly and not sink too fast.

Cook the pancakes 2-3 minutes on the first side, until bubbles form on the surface and edges appear to be set. When the pancakes are golden brown on one side, flip and cook 1-2 minutes more.

Place cooked pancakes on a plate and keep warm in a 200°F (95°C) oven until ready to serve remainder of batter.

3. Serve and Garnish

When your Banana-Spice Cakes have cooked, here is how to serve them.

Classic American maple syrup is perfect to drizzle over pancakes or you can also opt for honey if you prefer a slightly different taste.

Top with caramelized bananas for extra banana-deliciousness and some decadent sweetness.

Top with chopped nuts like pecans or walnuts, for some added crunch and texture.

Top with whipped cream and a sprinkle of powdered sugar if you’re feeling indulgent enough to eat cake for breakfast.

Give the Batter a Rest:Allowing your batter to sit for a few minutes will make sure that the flour absorbs some of the liquid and allow those leaveners activate, which is going to create fluffier pancakes.

Lower the Heat: If the pancakes are browning so quickly, then reduce heat to avoid burned outer with runny internal. Medium Heat: You will get consistent, well-cooked pancakes.

Make It Spicy: Customize your spices to fit your taste buds.!!} For an extra hint of cinnamon, feel free to add more, or want a spicier punch then ramp up the nutmeg or cloves.
