Ingredients:
Shrimp (peeled and deveined) One lb.
1 Cup of uncooked quinoa or brown rice (or cauliflower rice for low carb)
1 cup black beans, cooked
1 ripe mango, diced
1 avocado, sliced
1 red bell pepper, diced
1/4 cup red onion, diced
1/2 cup halved cherry tomatoes
2 tbsp olive oil
1 tsp paprika
1 tsp cumin
2.5 mL cayenne pepper (optional)
Salt and pepper to taste
Fresh cilantro for garnish
Cilantro Lime Dressing:
Juice of 2 limes
1/4 cup olive oil
1/4 cup of fresh cilantro, chopped
Salt and pepper to taste
Instructions:
Prepare the Quinoa or Rice: Rinse and drain the quinoa brown rice and cook according to package instructions. In a large skillet, sauté cauliflower rice in olive oil until softened if you are using cauliflower rice.
Shrimp – in a mixing bowl, combine the raw shrimp with olive oil, paprika, cumin, cayenne pepper and a pinch of salt + pepper. In a large pan over medium heat, grill shrimp 2 to 3 minutes on each side or until pink and opaque. Set aside.
Mango Salsa: Mix diced mango, red bell pepper, red onion and cherry tomatoes in a bowl. Add a pinch of salt next and set aside.
For the Dressing: Whisk lime juice, olive oil, fresh cilantro leaves, salt and pepper until you get a creamy consistency such as this amazing cilantro lime dressing.
Layer the Bowl: In a large bowl, add quinoa or rice into the bottom of the bowl. Shrimp, Black Beans, Avocado Slices and Mango Salsa Pour the dressing on top, use generously.
Garnish: Top with some fresh cilantro and Enjoy!
