Instructions:
Pumpkin Seeds:First things first, get the seeds out from your freshly carved pumpkin. First, carefully separate the seeds from the pulp (they will not germinate otherwise) and rinse them thoroughly. Remove the seeds, and dry them as best you can with a paper towel to make sure they roast evenly.
Preheat your oven: Preheat your oven to 350°F (175°C).
Prepare the Seeds: In a bowl, combine the melted butter (or coconut oil), cinnamon, sugar and salt. Spread the pumpkin seeds with this until they are well soaked.
Toast the seeds: Spread onto a baking sheet lined with parchment paper, in just one layer. Roast for 20 – 25 minutes, stirring from time to time until it is uniformly roasted. And watch them because they can burn really quickly!
Cool and Enjoy: After setting them in the oven, cool. They will crisp us as they cool. Eat immediately as a snack or store in an air-tight container for up to 1 week.
