Pumpkin Pancakes Ingredients:
A perfect pumpkin pancakes recipe is all about balance. Here is a breakdown of what you will be needing:
Flour: Regular unbleached all-purpose flour can be used in this recipe, however you could also substitute half or up to all of the amount with whole wheat with decent results. You can finely grind your own soft white wheat on high for 60 seconds without needing sifting and measure out what is needed for this recipe (so if you replace the full amount it would take about 2 cups or slightly more), same goes for spelled flours like kamut; makes a great flavor here! Or use a good quality gluten-free blend too.
Canned Pumpkin or Pumpkin Puree: While canned pumpkin is perfectly lovely, fresh homemade pumpkin pureé will yield even better results.
Eggs: You need eggs for this recipe, as they help hold the batter together and give the pancakes a fluffy structure.
Milk of your choice: It could be dairy or plant based milk, your call.
Baking Powder — this gets your pancakes puffed up and fluffy.
Pumpkin Pie Spice: This combination houses a generous portion of cinnamon, nutmeg and ginger as well as some cloves for the perfect fall flavor finished pancakes.
Brown Sugar: Greater depth of flavor and adds a mild sweetness to enhance the pumpkin and spices.
Butter — Melted butter delivers richness to the batter but you can use coconut oil instead if you prefer (this substitution would make your pancakes dairy-free).
Vanilla extract: offers depth and a hint of sweetness to the flavour profile.

Suggestions for the Best Pumpkin Pancakes
Pumpkin pancakes are simple but they can be a bit tricky to make just right.
Do not overmix: This will result in dense pancakes. Stir until the dry ingredients are just moistened.
Heat the griddle: The griddle or skillet should be hot before you add the pancakes to cook. This ensures even cooking.
Add toppings: Make your own choice. In fact, feel free to top with a dollop of Greek yogurt, or a sprinkle of granola or caramel sauce for a super indulgent treat.
How to Lighten: Replace half the flour with whole wheat flour for a more toothsome pancake. You could also cut back the sugar or replace it with maple syrup or honey.
Can I make pumpkin pancakes in advance and freeze? Serve in a single layer for small batches, and then freeze the rest. You can then place them into a bag safe for the freezer. Just pop in the toaster or microwave for some ridiculously quick and easy breakfast action!
